Beansprouts are used as an accompaniment to many Chinese dishes – ordinary dishes as well as some celebratory dishes. They taste best and retain their nutritional value when cooked for a short amount of time. Beansprouts retain some crunch – so are best eaten stir-fried, in soups or blanched until steaming hot.
