Stir-fry Beansprouts with…

Serves 4

This is the basic stir-fry recipe, with suggestions for variations below it

Ingredients

  • 350g Beansprouts
  • 1 carrot, grated
  • 3 spring onions, sliced into 3cm diagonals
  • 2 gloves garlic, crushed or thinly sliced
  • 2 tablespoons olive or sunflower oil
  • Salt and pepper to taste
  • Coriander or parsley to garnish

 

Method

Heat the oil in a frying pan on medium heat

Fry garlic until lightly brown

Increase heat and tip all the ingredients into the frying pan, stirring regularly and taking care not to burn the garlic

Cook for 2 minutes or more, depending on how crunchy you like your beansprouts

Garnished with chopped coriander or parsley

 

Variations to the basic recipe

Add 200g sliced mushrooms

Add half a red or green sweet pepper,  sliced diagonally

Add 3 sticks of celery, sliced diagonally and some of the celery leaves, finely
chopped. Season with celery salt to further enhance the flavour

Add 3-4 medium size tomatoes, cut into quarters or eighths. This gives the dish a tangy taste and adds colour

Add a few pieces of Tempeh (fermented soya bean patties)
